We care about what you eat. Welcome to a meal where the food is good, flavorful, and sustainable.

Sustainable food philosophy

Our sustainable food philosophy is about serving meals that are not only flavorful but also nutritious and well-rooted in environmentally conscious choices. We follow a food philosophy that focuses on sustainability, quality, and taste.

We make food from scratch, from farm to table, and offer a varied selection of organic and nutritious dishes. Currently, about 40% of our food is organic.

You will almost certainly eat things you have not eaten before; we want to challenge you on flavors. Everything from Asian fusion to traditional cuisine.

Dietary adjustments for allergies

We understand that many have special dietary needs, and we accommodate these. We accommodate for:

Locally sourced food

We focus on locally sourced food because it provides fresher flavors, gives us food from farm to table, and supports local farmers. By using ingredients from our own orchard, vegetable garden, and the local area, we help reduce our environmental footprint.

    • Crayfish from the fjord

Make our Muhammara

We make several spreads for the breakfast and evening buffet. Muhammara is a dip from the Middle East that is very popular. You can use it on bread or as a dip for vegetables.

    • 500g grilled peppers

    • 25g sun-dried tomatoes

    • 40g walnuts

    • 40g almonds

    • 1 tsp paprika powder

    • 1 tsp smoked paprika

    • ¼ tsp chili flakes

    • 1 tsp salt

    • 1 tsp maple syrup

    • 1 clove garlic

    Drain the peppers.

    Mix everything together with an immersion blender, blender, or food processor.

    Store in the refrigerator.

    Lasts at least one week.
